The Steps Before Pressing: Getting to Cocoa Liquor
You cannot press cocoa butter from raw beans — the fat has to be freed from the cell structure first, which means the beans go through the entire early chocolate-making process before a press ever touches them. Beans are roasted, then cracked and winnowed to remove the fibrous husk and leave clean nibs. Those nibs are ground.
Grinding is where the fat is released. The nib’s cell walls rupture and the cocoa butter flows out, turning the solid nib into cocoa liquor (also called cocoa mass or chocolate liquor) — a fluid that is roughly half fat and half fine cocoa solids. Pressing: How the Butter Is Separated
Pressing is the defining step: a hydraulic press forces liquid cocoa butter out of the cocoa liquor through fine mesh screens, holding back the solids as a compressed cake. Warm cocoa liquor is pumped into a series of horizontal chambers (“pots”) and squeezed at very high pressure. The molten cocoa butter runs out clear and golden; the non-fat solids stay behind, compacted into hard, dark discs of “press cake.”
This is the process Casparus van Houten patented in 1828 — the hydraulic cocoa press that his son Coenraad paired with alkalizing to create Dutch-process cocoa. Before the press, there was no practical way to separate cocoa fat from cocoa solids, which is why drinking chocolate had been greasy and hard to dissolve. The press changed the entire industry: it made defatted cocoa powder possible, and it made surplus cocoa butter available as an ingredient to add back into eating chocolate.

Deodorized vs Undeodorized Cocoa Butter
The main quality distinction in cocoa butter is whether it has been deodorized. Freshly pressed cocoa butter carries aroma and volatile flavor compounds from the beans it came from. Deodorization is a steam-stripping step, carried out under heat and vacuum, that removes much of those volatiles to produce a milder, more neutral fat.
- Undeodorized (natural) cocoa butter generally retains more of the cocoa aroma and flavor of its source beans. It is what craft and bean-to-bar makers want, because it carries that character into the finished product. Its color runs ivory to pale yellow from natural carotenoids; color alone is not a reliable quality marker.
- Deodorized cocoa butter is milder and more consistent. Industry favors it because it removes batch-to-batch flavor variability. It is not necessarily bright white — deodorized butter can remain yellowish — and it can keep a faint cocoa taste rather than being completely flavorless.

How Much Butter a Bean Yields
Cocoa butter yield is capped by the bean’s natural fat content, which runs 50 to 57% of nib dry weight and varies with origin and climate. Tanzanian and Trinidadian beans sit at the high end (57–58%); Ecuadorian beans run lower (around 52%). As a rule, the farther from the equator and the more temperate the growing climate, the higher the fat content.
In practice a press never extracts all of it — some fat stays bound in the press cake (that residual fat is what makes cocoa powder more or less “fatty”). So the usable cocoa butter from a batch of beans is meaningfully less than the raw fat percentage suggests. Cocoa butter is the entire cacao contribution to white chocolate — it is the only part of the bean in the recipe. White chocolate is cocoa butter plus milk solids plus sugar, with no cocoa solids at all, which is why it has no brown color and none of the roasted, bitter notes that come from the non-fat solids. Under EU rules it must contain a minimum of 20% cocoa butter and 14% milk solids to be called white chocolate.
